The invention discloses a breeding method for a large-grain sweet-endosperm soft-kernel rice variety. The breeding method comprises the following steps : with sweet-endosperm rice as a parent A, ultra-large-grain rice as a parent B and soft-kernel glutinous rice as a parent C, subjecting the parent A to hybridization with the parent B and the parent C separately so as to obtain two single-cross F1 seeds; subjecting the two single-cross F1 seeds to plantation and carrying out hybridization so as to obtain a double-cross F1 seed; subjecting the double-cross F1 seed to plantation and harvesting a double-cross F2 seed; and subjecting double-cross F2 to F6 seeds to plantation, carrying out systematic breeding and selecting shaped rice with thousand seed weight of no less than 40 g, total soluble sugar content of no less than 6% and amylose content of no more than 5% and with disease resistance so as to obtain rice used for development of rice kernels. The novel-concept rice bred in the invention has the characteristic properties of rice kernels of three rice varieties, i.e., the sweet-endosperm rice, the ultra-large-grain rice and the soft-kernel glutinous rice, enables a novel rice kernel product for teaching in joyful activities to be developed, enriches the purposes of traditional rice, increases the added value of rice and can be integrated with leisure food and the tourist industry.
