| 摘要 |
The present invention relates to baked rice cake and a producing method thereof. The producing method of baked rice cake of the present invention comprises the following steps of : kneading rice powder, which is obtained by pulverizing rice selected from nonglutinous rice or glutinous rice, with water, stretching the dough, putting paste made of root and tuber crops, pulse crops, and vegetables into the dough, and sealing the same in a circular shape to produce rice cake; air-frying the surface of the rice cake produced in the previous step for several seconds; applying edible oil having a high smoke point onto the air-fried surface; applying rice glue onto the applied edible oil; applying the dough kneaded by a mixture of rice powder and active flour powder onto the applied rice glue so as to complete a shape of rice cake bread; and baking the rice cake bread with the completed shape. According to the present invention, filling of a paste form containing predetermined moisture is formed in rice cake placed in a bread, and the outside of rice cake completes air-frying and edible oil and rice glue application steps, thereby providing soft texture of the rice cake inside a produced rice cake bread, instead of a hard texture.
