PROBLEM TO BE SOLVED : To provide methods for producing lactic acid bacteria which produces a carotenoid pigment exhibiting colors other than yellow. SOLUTION : The present invention provides an orange lactic acid bacterium obtained by suspending a lactic acid bacterium cultured anaerobically in water and subsequently exposing in air, wherein a color system a* being 4≤a*, and a color system b* is 27≤b*, in an L*a*b* color system.
