摘要

The present invention provides a method for producing oil-and-honey pastry capable of providing excellent taste and excellent texture when chewed. The present invention comprises : a step (a) of mixing glutinous rice, barley, and yellow soybeans at a weight ratio of 5 to 7 : 2.5 to 3.5 : 1 and then pulverizing the mixture; a step (b) of mixing water, soju (Korean distilled liquor), and cooking oil at a weight ratio of 2.5 to 4 : 0.7 to 1.3 : 1; a step (c) of mixing the mixed pulverized product of the step (a) and the mixed liquid of the step (b) at a weight ratio of 10 : 0.8 to 1 to prepare a dough material; a step (d) of steaming the dough material of the step (c) at 100 to 110° C for 2 to 3 hours; a step (e) of aging the steamed material of the step (d) for 12 to 24 hours, and then shaping the shape of the oil-and-honey pastry; a step (f) of drying the material formed in the step (e) at 58 to 72° C for 3.8 to 5.7 hours; a step (g) of firstly frying the material dried in the step (f) at 120 to 130° C for 20 to 30 seconds and secondly frying the material at 180 to 190° C for 1 minute and 45 seconds to 2 minutes and 15 seconds; a step (h) of coating the surface of the oil-and-honey pastry, which has been fried in the step (g), with a sugar solution prepared by mixing starch syrup, grain syrup, ginger powder, and hot water; and a step (i) of applying at least one selected from sesame or black sesame on the surface of the surface-coated oil-and-honey pastry.(AA) Raw material(B1, B2, B3, B4) Minor material(CC) Water(DD) External packing material(EE) Glutinous rice/Barley(FF) Soju, bean, barley, etc(GG) Wheat flour(HH) Soybean(II) Starch syrup, black sesame, sesame(JJ) Underground water(KK) PP, paper box(L1, L2, L3, L4, L5, L6) Good receipt/storage(MM) Receipt(N1, N2, N3) Selection(OO) Ultraviolet sterilization device(P1, P2) Meterage(QQ) Washing/immersion(RR) Pulverizing/doughing(SS) Steaming(TT) Kneading/molding(UU) Drying(VV) Storage(WW) First frying(XX) Frying process (CCP-1B)(YY) Frying temperature : 180 +- 10° C, frying temperature : 2 minutes +- 15 seconds(Z1) Mixing(Z2) Internal package(Z3) PP film(Z4) Metal detection CCP-2P(Z5) Fe : non-detection more than 2.0 mm, Sus : non-detection more than 3.0 mm(Z6) External package(Z7) Paper box(Z8) Storage (room temperature)(Z9) DeliveryCOPYRIGHT KIPO 2019
