The invention relates to the production of dry extracts from plant raw material, which have high nutritional value and high biological activity and are intended for use in the food, pharmaceutical and cosmetic industries and in other branches of industry. According to the present method, the amino acid composition and/or vitamin composition of a prepared initial raw material is measured. The necessary extracting agents are selected. The raw material is extracted in extractors using various extracting agents at a temperature of 20-40癈. The resulting extracts are isolated, concentrated, then blended. The viscous extract is dried out in vacuum dryers at a temperature of up to 40癈 until a powder is obtained. Then the amino acid composition and/or vitamin composition of the resulting extract is/are measured, and the amino acid composition of the raw material and of the resulting extract are compared. An extract corresponding to the amino acid composition of the raw material by 80 per cent or more is taken for further use. The invention makes it possible to produce extracts having high nutritional value and biological activity with maximum preservation of the biological activity of the initial plant raw material, and to carry out quality control of the resulting extract.
