The essence of the invention is the use of sulfasalazine (synonyms : Salazosulphapyridine, Azopyrine, Azulfidine, Salazopyridin, Salazopyrin, Salazosulfapyridine, Salicylazosulfapyridin, Salisulf, Sulfasalazin, Sulphasalazine) of formula (I), for a new purpose as an inhibitor of the formation of advanced glycation end products.
