摘要 |
The present invention relates to a method for manufacturing a licorice fermented extract with an increased liquiritigenin content. The method comprises : a step 1) of adjusting moisture of licorice powder; a step 2) of inoculating the licorice powder having the adjusted moisture of the step 1) with Aspergillus oryzae or Aspergillus luchuensis; a step 3) of obtaining a licorice extract by fermenting the licorice powder with which the Aspergillus oryzae or the Aspergillus luchuensis is inoculated in the step 2); and a step 4) of obtaining a licorice fermented extract by extracting the licorice extract of the step 3) as an extraction solvent. The present invention can obtain the licorice fermented extract including a high content of liquiritigenin, is environmentally-friendly by applying microorganism having high a β -glucosidase activity, and can increase the liquiritigenin content by using a simple and inexpensive method for controlling a fermentation condition of licorice. The licorice fermented extract manufactured by the manufacturing method of the present invention can be widely used for food, medicine, health functional food, and cosmetics by including the high content of the liquiritigenin and providing an excellent antioxidant activity, and can be used as a saccharifying agent with excellent saccharification power.COPYRIGHT KIPO 2019 |
