The invention relates to protein-polyuronide conjugates, wherein at least one polyuronide is bonded to a protein by means of a covalent bond and the protein is of plant origin. The invention further relates to creaming-stable edible emulsions, beverage syrups, and ready-to-drink beverages, to the use of protein-polyuronide conjugates to produce foods and cosmetic or medical products, to the use of protein-polyuronide conjugates as emulsifiers, to a method for producing protein-polyuronide conjugates, and to the protein-polyuronide conjugates produced by means of the method.
