The present invention relates to a method for obtaining compounds derived from apocarotenoids in microorganisms and plants, for use in agricultural and pharmaceutical applications, which is an enzymatic method for obtaining apocarotenoid derivatives, specifically from crocetin and picrocrocin, which comprises a series of enzymatic reactions carried out by means of plant enzymes in a host system and other important crops.
